Yes, I said it and yes, I mean it. This recipe is mega easy. There’s no other way to state it. It may actually be the world’s easiest recipe. So, if you’re sick of laboring over million-ingredient recipes only to have your toddler spew the results out in disgust – you are in luck! This recipe is quick, delicious and healthy. I know it sounds too good to be true. But it’s true. It’s spew-proof. Pinky promise.
Mega Easy Super Greens Flapjacks
makes about 15, 3 inch flapjacks
- 2 cups Kodiak Cakes Flapjack & Waffle Mix in Buttermilk & Honey
(yup, the Shark Tank guys)
- 1.5 cups water
- 1 tablespoon flaxmeal
- 1 handful of baby greens (spinach, kale or a blend of the two are our favorites)
Add mix, flax meal, water and spinach to your high speed blender and blend on Batter setting or about 30 seconds on low speed. Once batter is prepared, simply pour or ladle onto a hot skillet – no cooking spray or additional oiling needed.
I like to whip up this recipe on Saturday mornings. It makes enough to feed us for breakfast and there’s plenty left over to freeze for the rest of the week. Currently, our favorite way to eat ’em is topped with Nutiva Buttery Spread (a blend of red palm and coconut oils), Barney Butter Almond Butter and pure maple syrup (tapped on a family farm up in Wisconsin – thanks mom and dad!). They’re also pretty delish alongside fresh berries, tart Greek yogurt and Applegate Farms Chicken and Maple breakfast sausage. Enjoy!
